Vegan Parmesan Cheese

Vegan Parmesan Cheese

This vegan Parmesan cheese is very easy to prepare and it is very tasty. In addition, it keeps very well and is cheaper than conventional Parmesan.

It takes few ingredients for its preparation: cashew nuts, beer yeast or nutritional yeast, fine sea salt and garlic powder.

The idea is to use unsalted nuts because they are healthier but it would not be a problem if you only get balances. Brewer's yeast is easier to find than nutritional yeast but it usually contains gluten, so beware of celiacs.

The only difference with traditional Parmesan is that this vegan cheese does not melt, but it works perfectly to use it as grated cheese in pasta, appetizers or in general in any dish that has this type of cheese but does not need to melt.

To make this recipe you will need a food processor or a grinder. The rest of the ingredients are already ground, so they will not be a problem.

Cashews can be replaced by other nuts because they are what give the base and texture to this recipe. The rest of the ingredients are those that provide that cheese-like flavor, it must be a dried fruit without salt, without skin and that have a flavor as neutral as possible.
